The Fifth Chilean Professional Technical Education Festival, WorldSkills Chile Competition, got off to a great start on Monday, November 8, 2021.  Barbados joined six other member countries of WorldSkills Americas to take part in the 2021 competition and is represented in the cooking category by WorldSkills Barbados training squad member, Jessica Cummins.

Day one of the competition commenced with a theoretical exam, which was administered virtually, to test the participants’ underpinning knowledge in their skill area.

On day two, the assessments of technical skills commenced. Competitors prepared a Chicken Consommé with an egg garnish and were assessed based on their stock making, clarification and their presentation skills. Chef Peter Edey who is serving as a coach and a judge in the competition, explained that day two; module one, tested the competitor’s ability to prepare very classical meals, while paying close attention to details and measurements.

On day three, competitors were assessed on how well they presented and explained their main course using a local product of their choice (one platter with traditional mounting and one platter with dispersed mounting). Jessica prepared a parsley crusted chicken roulade stuffed with mousse. A caramelized Bajan rum infused sauce with fried breadfruit choux tubes and pan roasted mushrooms and squash ribbons.

The WorldSkills Chile competition will conclude on Thursday, November 11. To view the live stream, please visit: (WorldSkills Chile YouTube Channel)
